The invention relates to a probiotic food for salmonids, including at least one lactic acid strain, obtained from said salmonids, and having immunostimulant and protective properties; and to the method for preparing same, including the following steps: (a) introduction of a source of carbon and the inoculum of at least one probiotic strain into a fermenter, (b) addition of nutritional components, (c) cold extrusion of the mixture, (d) formation of pellets, and (e) drying of the pellets.
