The present invention relates to a low-calorie food composition containing alginate, calcium and water, which according to the invention further contains a vegetable extract obtained from at least one vegetable variety or a fruit extract or optionally a meat extract or fish extract. The low calorie food composition is suitable for the production of shaped food products, for example in noodle form. The present invention furthermore relates to a preferred process for producing a shaped food product by heating a vegetable extract, fruit extract, meat extract or fish extract in liquid form or in powder form with water and alginate and, if desired, flavoring agents, and placing the resulting viscous mixture in a water bath (12 ), in which a calcium salt is dissolved, whereby the shaped food product (15) is formed, which is then removed from the water bath.
