The invention is directed to an animal muscle derived product, a method to prepare such product and to a food product comprising such an animal muscle derived product.
The animal muscle derived product comprises myofibrils in a matrix, wherein the average w/w concentration of sodium cations in the myofibrils is lower than the average w/w concentration of sodium cations in the matrix. The method for preparing an animal muscle derived product comprises adding a first salt, different from a sodium salt, to an animal muscle derived product and thereafter adding sodium chloride to said animal muscle derived product.
