DESCRIZIONE
The present invention relates to a method for packaging a food product in a liquid containing a preservative substance, for example a brine, which comprises the steps of: bringing the food product and the liquid together, pre-storing the food product in the liquid during a given time period, separating the food product from at least the major part of the liquid, storing a given amount of food product in a package comprising a flexible bag, wherein the bag contains a small amount of storing liquid, removing air from the package such that it becomes substantially free from air, for example through mechanical compression of the bag or by a so called soft vacuumation, and finally sealing the bag package.
