The invention relates to a method for storing and/or maturing meat in which raw meat is stored in the presence of an alkaline carbonate and/or alkaline earth carbonate which is made available in a matrix (1) of aligned and/or non-aligned fibres (2), and to an element for use in the storage and/or maturing of meat, which comprises a layer of ordered and/or unordered fibres and optionally further layers, which element contains alkaline carbonates and/or alkaline earth carbonates and/or hydrogen carbonates. The method claimed enables raw meat to be matured at low cost, without losing the taste quality that is achieved with dry maturing.
