The invention relates to an energy system, in particular an air-conditioning system for air-conditioning rooms, comprising an energy source for heat pump systems, in which energy and/or heat is stored in a latent energy or heat store, comprising an ice slurry producing apparatus (100) for producing ice slurry from a liquid ice-brine slurry (10), which operates according to a method for air-conditioning rooms, in which energy or heat is stored or buffered in a latent energy or heat store and is extracted or drawn off, wherein ice slurry is provided as the latent energy or heat store, and according to a method for producing ice slurry from an ice-brine slurry (10), comprising the steps of: filling the liquid ice-brine slurry into a housing (110), cooling the liquid ice-brine slurry by means of contact with a heat exchanger device (200) arranged in the housing (110) and at the same time stirring the ice-brine slurry (10), in order in this way to produce the ice slurry, wherein, when a layer of ice is forming on the heat exchanger device (200), the cooling is interrupted as soon as the layer of ice reaches a predetermined thickness and the cooling is continued as soon as the layer of ice is less than the predetermined thickness.
