Treating foodstuffs e.g. fresh meat, meat products, meat preparations and fish, where the foodstuff is provided with at least one additive on its surface, which penetrates into the interior of the foodstuff, comprises storing the foodstuff provided with the additive in an air tight space at a gas atmosphere different from the outside atmosphere for a specified time, during which a pressure lying above the atmospheric pressure is created in the air tight space, by at least a partial penetration or distribution of the additives into the interior of the foodstuff.
