Silver sillago is one of the commercially important fish species in China. Protein properties and lipid profiles were evaluated. It is a good source of protein, consisting of 46.98% myofibrillar protein, 20.74% sarcoplasmic protein, 24.70% alkali soluble protein and 6.91% Stroma protein. The major sarcoplasmic proteins exhibited molecular weights of 27, 31, 34, 36, 38, 43, 49, 61 and 98 kDa, and SSP distinctively exhibited molecular weights of 42 and 120–200 kDa. Protein solubility was comparatively lower at pH 6 which is near the PI of protein molecules. The proteins thermogram showed six denaturation peaks at 42.30°C, 51.80°C, 62.83°C, 73.04°C, 80.06°C, and 89.83°C, respectively. The essential amino acids were rich, accounting for 36%. It is generally characterized by the high level of the polyunsaturated fatty acids, especially EPA and DHA. It is also a good source of Ca, Mg, Zn and Fe.
