RIASSUNTO
With the social concerns about the safety issues of meat products in recent years, consumers' demands for green and healthy mutton increase rapidly. However, the confidences in meat products along with the weak construction of overall industrial integrity system have driven the consumers to make the choices unfavorable for the enterprise integrity management. However, the realistic characteristics of industrial chain, such as, in-depth vertical coverage, disperse horizontal distribution, changeable dynamics and complex factors influencing the quality and safety of supply chain make it difficult for enterprise to carry out uniform quality and informatization management. This paper analyzes the problems faced by enterprises in the running status of meat supply chain and the trend of industrial chain integration in China. The paper proposes to establish a Traceable System and Evaluation Mechanism of Mutton Quality by taking all industrial chains into consideration and based on the principle of full life circle, namely, from origin of production to ultimate consumers. Based on the business process analysis of mutton supply chain, health and epidemic prevention, food control and other aspects, the key control points of mutton supply chain were traced back.
