Aquaculture meat products including fish and crustaceans having a ratio of omega-3 polyunsaturated fatty acids of eicosapentaenoic acid [""EPA""; cis-5, 8, 11, 14, 17 - eicosapentaenoic acid; 20:5], to docosahexaenoic acid [""DHA""; cis-4, 7, 10, 13, 16, 19 - docosahexaenoic acid; 22:6], equal to or greater than 1.4:1 based on the individual concentrations of each as a percent of the total fatty acids in the aquaculture meat product are disclosed. Furthermore, such aquaculture meat products may have a concentration of the sum of EPA and DHA that is at least about 0.5%, measured as a weight percent of the aquaculture meat product.
